Leek & Rutabaga Soup

Here is a great, nourishing and simple soup recipe I like to keep on hand! It only has a few ingredients, but you’d never guess it, because it’s so delicious. It also stars rutabaga, which is not generally a favourite when cooked in other ways, especially with young children. Yet, my kids really love its mild flavour in this soup. I hope your family loves as much as mine does!

Ingredients

Leek & Rutabaga Soup Recipe

leeks, finely chopped
1
cube vegetable bouillon
5 cups
filtered water
2
large rutabagas, diced
3 tbsp
maple syrup
Salt and pepper to taste
2 tbsp
avocado oil

Directions

Step 1
In a large pot set over medium heat, sauté leeks in the oil with a bit of salt and pepper. Cook for 4 to 5 minutes, stirring occasionally.
Step 2
Add rutabaga and stir. Add water, the bouillon cube and maple syrup.
Step 3
Increase heat a bit and stir the mixture until it begins to boil. Simmer for 5 minutes, stirring constantly. Reduce heat and continue to simmer over medium-low heat for 15 to 20 minutes.
Step 4
Transfer to a blender and blend until smooth and creamy!
