Here is a great, nourishing and simple soup recipe I like to keep on hand! It only has a few ingredients, but you’d never guess it, because it’s so delicious. It also stars rutabaga, which is not generally a favourite when cooked in other ways, especially with young children. Yet, my kids really love its mild flavour in this soup. I hope your family loves as much as mine does!
Ingredients
- Leek & Rutabaga Soup Recipe

- leeks, finely chopped
- 1
- cube vegetable bouillon
- 5 cups
- filtered water
- 2
- large rutabagas, diced
- 3 tbsp
- maple syrup
- Salt and pepper to taste
- 2 tbsp
- avocado oil
Directions
- Step 1
- In a large pot set over medium heat, sauté leeks in the oil with a bit of salt and pepper. Cook for 4 to 5 minutes, stirring occasionally.
- Step 2
- Add rutabaga and stir. Add water, the bouillon cube and maple syrup.
- Step 3
- Increase heat a bit and stir the mixture until it begins to boil. Simmer for 5 minutes, stirring constantly. Reduce heat and continue to simmer over medium-low heat for 15 to 20 minutes.
- Step 4
- Transfer to a blender and blend until smooth and creamy!
