Homemade Vegan Ice Cream

It’s summertime, it’s hot outside and the kids are asking for a refreshing snack… what could be better than ice cream! At home, we opt for vegan ice cream (there are now several kinds available). Better still, I like to make it myself, either with or without added sweeteners. Homemade always tastes best! Because of the coconut milk, this recipe turns out a lot like those available in store. In fact, coconut milk is used in many commercial vegan products, and rightly so: its rich, creamy texture produces a product that resembles traditional ice cream.

Ingredients

Coconut milk ice cream
1
can of organic coconut milk (rich in healthy fats)
¼ cup
coconut sugar or maple syrup
½ cup
fruit of your choice (my favourites are strawberries and raspberries)

Directions

Step 1
Put all the ingredients into a blender and run for 1 to 2 minutes.
Step 2
That’s it! Enjoy as is or top with coconut flakes and some fresh mint leaves… it’s truly delectable!
