Description
Even though there won’t be any large gatherings for Saint-Jean this year, we can still celebrate at home with recipes made with products from Quebec. And, to put the whole family in a festive mood, I like to choose recipes that highlight the colour blue. Here are the snacks and appetizers I plan to make for our home celebration of this year’s Fête National. Blue foods in honour of Quebec.
Ingredients

- Blue smoothie
- 1 cup
- almond milk

- Evive Saphir flavour smoothie wheel
- ½

- chili powder

- Quebec tomato salsa
- 2
- large organic Savoura tomatoes, finely diced
- 1
- clove garlic, minced
- ½
- red onion, finely chopped
- ⅓ cup
- fresh cilantro, finely chopped
- Juice of 1 lime
- 1
- small jalapeno pepper, finely chopped
- Salt and pepper, to taste

- Tempeh potato salad
- 4 cups
- blue baby potatoes
- 2
- shallots, finely chopped
- 3 tbsp
- vegenaise
- 1 tbsp
- balsamic vinegar
- 1
- package Aux Vivres smoked tempeh, sliced
- Salt and pepper
Directions
- Step 1
- Blue smoothie
Blend all ingredients in a blender to obtain a thick, smooth consistency. Evive’s ingredients include blue spirulina, which increases the nutritional value and gives the smoothie its bright blue colour.
- Step 2
- Quebec tomato salsa
Combine all ingredients in a bowl and, to keep with the Saint-Jean theme, serve with blue tortilla chips.

- Tempeh potato salad
Boil potatoes in salted water for 15 minutes, or until fork tender. Strain and rinse under cold water.
- Step 4
- Halve potatoes and place them to in a large bowl.
- Step 5
- In small bowl, whisk together vegenaise, vinegar, salt and pepper.
- Step 6
- Add shallots.
- Step 7
- Over medium heat, fry the tempeh in a little coconut oil for 3 minutes on each side. Cut cooked tempeh into small pieces and add to the rest of the salad. Toss gently and serve!
