Apple peel and mint tea

Makes: 1 ½ cups (375 ml)
After baking apple pies, do you always end up with a mountain of apple peels on the counter? Before tossing them in the compost, use them to create a delicious herbal tea made of apple peels and cores, flavoured with mint and honey.

Ingredients

water

apple, peel and core only (see Chef’s tip)

thin slice lemon or long piece of lemon zest, removed with a vegetable peeler (see Chef’s tip)
4
mint leaves (see Chef’s tip)
1 tsp
honey, or more to taste

Directions

Step 1
In a small pot, bring the water, apple peel, apple core and lemon slice to a boil. Press on the fruits with a potato masher. Remove from the heat. Add the mint leaves and let infuse for 5 minutes. Strain the mixture into a mug. Add the honey and mix well.

Tips

Chef’s tip
  • Take the time to wash the apple and lemon thoroughly before using them. We suggest buying organically grown fruit for this recipe. Apples with red peels, such as Cortland, make a lovely pink herbal tea. Pear, peach and apricot peels make excellent substitutes for apple in this recipe.
  • Before juicing a lemon, take the time to remove the zest with a fine grater or vegetable peeler. The zest if full of flavour and freezes very well.
  • The mint can be replaced with other herbs or aromatics such as thyme, lemon balm or even dried hibiscus flowers.
