Celebrating Saint-Jean Baptiste Day at home

Even though there won’t be any large gatherings for Saint-Jean this year, we can still celebrate at home with recipes made with products from Quebec. And, to put the whole family in a festive mood, I like to choose recipes that highlight the colour blue. Here are the snacks and appetizers I plan to make for our home celebration of this year’s Fête National. Blue foods in honour of Quebec.

Ingredients

  • Blue smoothie

  • Quebec tomato salsa

large organic Savoura tomatoes, finely diced

clove garlic, minced

red onion, finely chopped
⅓ cup
fresh cilantro, finely chopped
Juice of 1 lime

small jalapeno pepper, finely chopped
Salt and pepper, to taste
  • Tempeh potato salad
4 cups
blue baby potatoes
2
shallots, finely chopped
3 tbsp
vegenaise
1 tbsp
balsamic vinegar
1
package Aux Vivres smoked tempeh, sliced
Salt and pepper

Directions

Step 1
Blue smoothie
Blend all ingredients in a blender to obtain a thick, smooth consistency. Evive’s ingredients include blue spirulina, which increases the nutritional value and gives the smoothie its bright blue colour.
Step 2
Quebec tomato salsa
Combine all ingredients in a bowl and, to keep with the Saint-Jean theme, serve with blue tortilla chips.
Step 3
Tempeh potato salad
Boil potatoes in salted water for 15 minutes, or until fork tender. Strain and rinse under cold water.
Step 4
Halve potatoes and place them to in a large bowl.
Step 5
In small bowl, whisk together vegenaise, vinegar, salt and pepper.
Step 6
Add shallots.
Step 7
Over medium heat, fry the tempeh in a little coconut oil for 3 minutes on each side. Cut cooked tempeh into small pieces and add to the rest of the salad. Toss gently and serve!
