Comforting and nourishing vegan poutine

Chilly weather always makes me want to put on my slippers, change into my coziest pair of sweatpants and eat plenty of comfort food. For years now, I’ve made this recipe every time my family and I crave poutine, and it’s always a hit!

Ingredients

½ cup
green peas, cooked
Gusta vegan cheese, grated (to taste)

potatoes, peeled and cut into fries
½ tsp
paprika
1 tsp
garlic powder
Salt and pepper (to taste)

block organic firm tofu
3
cups water
2 tsp
salt
  • Sauce
⅓ cup
buckwheat flour
3 cups
tofu cooking water
2 tbsp
tamari
1 tbsp
tomato paste
1 tbsp
maple syrup
1 tsp.
vinegar
½ tsp
each: paprika, oregano, basil, thyme, cumin, onion powder, pepper
Pinch of ground cayenne pepper
Salt (to taste)

Directions

Step 1
To prepare the fries:
In a large bowl, soak the sliced potatoes in ice water for 10 minutes (they will be crispier once they are cooked). Drain and dry well. Add salt, pepper, paprika and garlic. Mix with your hands. Spread over an oven-safe baking sheet. Bake at 220 °C (425 °F) for 25 minutes, then toss and bake for another 20 minutes.
Step 2
To prepare the tofu:
Tear tofu into pieces with your hands (or grate it) and boil in salted water for 8 minutes. Drain, reserving the water for the sauce.
Step 3
Sauce
Place all ingredients in a small saucepan and bring to a boil, stirring constantly (to prevent sauce from sticking to the bottom). Cook over low heat, stirring constantly, for about ten minutes. If lumps form, transfer mixture to a blender and blend until smooth.
Step 4
Place fries, peas and a bit of Gusta cheese on a plate. Add tofu and top with sauce. This is what I call a hearty and satisfying meal, without the high calories and fatty, unhealthy ingredients of a traditional poutine!
