As the weather begins to warm up, the first thing I think about is my little herb garden! I love the flavours and freshness that these herbs add to summer recipes. Cilantro, mint, thyme, oregano and, of course, my precious basil! It is still my all-time favourite! I add a few leaves to my water to add flavour, use it as a garnish on tomatoes drizzled with balsamic vinegar and naturally, in my homemade tomato sauces. Today, I’d like to share a salad dressing recipe that everyone will love.
Ingredients
- ⅓ cup
- grapeseed or olive oil
- ⅓ cup
- raw cashews
- ⅓ cup
- filtered water
- 1 cup
- fresh basil, finely chopped (alternatively: use equal parts basil and cilantro)
- 1 tsp.
- salt
- 2 tbsp.
- lemon juice
- Minced garlic (half a clove)
- 1 tbsp
- agave nectar or maple syrup

- Place all ingredients in a food processor or blender. The cashews can be soaked overnight, but this is not essential. Blend until the mixture has a creamy texture. Serve on your favourite salad or simply with some raw veggies. This dressing is delicious on salads made with tomatoes, cucumbers and garden lettuce or spinach sprouts! The last time I made this recipe, I tried something new: I included two whole celery stalks with the basil and it was scrumptious. Here are just a couple of basil’s health benefits: it is an excellent source of vitamin C, which fights the effects of fatigue, and of vitamin A, which helps against the signs of aging thanks to its antioxidant properties. What’s more, basil is rich in camphor, which provides it with cold-fighting properties by helping keep the sinuses clear. I recommend a basil infusion to soothe tired eyes when you are experiencing fatigue. A basil poultice can also help relieve itching. Lastly, potted basil placed on the windowsill will repel flies and mosquitoes.
