Ingredients
- (small package) GoGo Lentil & Quinoa Fusilli
- 2 cups
- spinach
- Olive oil
- ¼ cup
- fresh chives and basil, chopped
- 1
- yellow zucchini, diced
- 1
- red bell pepper, diced
- ½ tsp
- each: dried oregano and thyme
- Juice of half a lemon
- Salt and pepper
Directions
- Step 1
- Fill a small pot with water, add 1 tsp. salt and bring to a boil. Cook the pasta for 6–8 minutes, stirring occasionally. Drain.
- Step 2
- Place spinach in a large bowl and add the hot pasta.
- Step 3
- Fire up the barbecue.
- Step 4
- In a separate bowl, toss cut veggies in a bit of olive oil, oregano and thyme. Mix well. Season with salt and pepper to taste.
- Step 5
- Transfer veggies onto a barbecue grilling pan or thread them onto skewers. Cook for 4 minutes on each side. Remove from grill and add to the pasta mixture.
- Step 6
- Add fresh herbs, lemon juice, a drizzle of oil, and salt and pepper. Mix and serve.
