Directions

Step 1
Finely julienne apples and place in a bowl. Drizzle with lime juice and season with salt and pepper. Set aside.
Step 2
Spread a clean damp tea towel on a work surface. Soak rice sheet in a bowl of warm water and then place delicately on the tea towel.
Step 3
Arrange two mint leaves and two cilantro leaves in the middle of the rice sheet, 4 cm (1½ in) from the top. Add a Boston lettuce leaf, placing the darker green side facing the rice sheet.
Step 4
Place red cabbage strips, julienned apples, and tofu strips in the centre.
Step 5
Fold each side of the rice sheet towards the middle and firmly roll sheet over itself from the bottom up to seal in the filling.
Step 6
Repeat for each rice sheet.
Step 7
For the sauce, purée all ingredients in a food processor until smooth.
