Ingredients
- plain goat cheese spread
- 125 g
- Zest from 1 lemon
- Pepper
- Water
- 4
- rice paper wrappers
- 2
- small zucchinis, cut into spirals
- ½ cup
- corn kernels
- 1
- beefsteak tomato, seeded and sliced
- ¼ cup
- fresh basil, chopped
- 1/3 cup
- mayonnaise
- ½ tbsp
- honey
- 1 tbsp
- spicy chipotle sauce
Directions
- Step 1
- In a bowl, place the goat cheese and lemon zest. Season with pepper. Stir well and set aside.
- Step 2
- In a large bowl, pour room-temperature water. Soak a rice paper in the water for a few seconds, then transfer the rice paper to a plastic cutting board.
- Step 3
- In the centre of the rice paper, place ¼ of the goat cheese mixture, zucchini spirals, corn, tomatoes, and basil. Roll the rice paper up. Repeat until all 4 rolls are done.
- Step 4
- In a bowl, combine the mayonnaise, honey, and spicy chipotle sauce. Stir and set aside.
- Step 5
- Serve the spring rolls with the chipotle mayonnaise. Enjoy!
