Directions
- Step 1
- Preheat oven to 190°C (375°F).
- Step 2
- In a skillet set over medium heat, sauté jackfruit in 15 mL (1 tbsp.) of olive oil for about 5 minutes, stirring regularly to pull as much as possible into chunks.
- Step 3
- Place 2 tortillas on a parchment-lined baking sheet.
- Step 4
- Divide jackfruit filling, cheese, and cilantro onto tortillas.
- Step 5
- Close with remaining tortillas and press down to seal. Brush with oil using a kitchen brush.
- Step 6
- Bake for 15 minutes or until quesadillas are golden.
- Step 7
- While quesadillas are in the oven, prepare salsa combining tomato, avocado, red onion, lime juice, and remaining olive oil. Season to taste and set aside.

- Cut quesadillas into triangular slices and serve with reserved salsa and sour cream.
